Shoofly Muffins - CMP
Ingredients:
1 1/2 cups flour
3/4 cup sugar
1/4 teaspoon salt
6 tablespoons butter
3/4 cup hot water
1/2 cup molasses
1/2 teaspoon baking soda
Procedure:
Preheat oven to 350. Grease & flour muffin pan. Combine flour, sugar, and salt: cut in butter to make crumb mixture. Reserve 1/2 cup for topping. Combine water, molasses, and baking soda: immediately add to remaining dry ingredients; mix well. Fill muffin cups 1/2 full. Sprinkle with reserved topping. Bake until toothpick inserted in center comes out clean. Let stand 10 minutes and then remove from pan. Enjoy!
