Ingredients:

2 cups sugar                                            
2 cups flour
1 cup oil                                                    
4 eggs
2 cups grated carrots                                
1 cup coconut
1 cup plumped raisins                                 
1 can crushed pineapple  {drained}
1 tsp. cinnamon                                         
2 tsp baking powder
1 1/2 tsp baking soda                                
1 tsp. salt

Procedure:

Grease and flour 13x9 pan.  Plump the raisins by cooking them for 5 minutes and drain them.  Cool them and measure them after they are plumped.  Mix sugar, oil and eggs.  Add everything else.
 

Bake 350 for 50 minutes.
