Ingredients:

1 cup barley cooked in chicken stock
1 can black beans
1 can fiesta corn (corn and peppers)
1 large tomato diced
1 small onion diced
1 clove garlic minced
1 avocado cubed
lime juice
1 tblsp olive oil
1/4 - 1/2 cup balsamic vinegar
 

Cook and cool barley (you can run under cold water)
Mix beans, corn, tomatoes, onions, garlic, avocado
Add lime juice, oil and vinegar
Mix in barley

Chill
