Ingredients:

2 chicken breast (buy whole store roasted)
3 scallions
can corn w/peppers
can black beans (drained)
pkg frozen spinach, thawed and drained
1 jalapeno diced
1/2 tsp cumin
1/2 sp chili powder
cilantro (to taste)
1 cup monterey jack cheese
wonton wrappers or small flour tortillas

Procedure:

Mix all ingredients; roll in wrapper and deep fry.  Use same ingredients but put in larger flour tortilla shell and place in baking pan with enchilade sauce on bottom, enchilada next, more sauce and finish with extra cheese.  These can be frozen individually and heated up as needed for quick meal.
