Tortellini with Roasted Garlic Dip - SMN
Ingredients:
1 large bulb garlic
1 package tortellini pasta
2 to 3 tbls olive oil (or cooking spray)
1/2 cup reduced fat mayo
1/2 nonfat sour cream
1/3 cup parmesan cheese
2 tbls hot sauce
Procedure:
Cut top off of garlic bulb. Wrap in foil and bake for 1 hour at 350. Cool until able to handle. Cook tortellini according to directions. Drain. Spray a cookie sheet with cooking spray and spread tortellini on cookie sheet. Spray the tortellini with cooking spray. Bake for about 10 minutes or until starting to get golden. (The other way is put olive oil in a pan a sautee the cooked tortellini until golden).
Separate the garlic cloves and pinch each clove so that garlic comes out. Put it in the blender or food processor. Add mayo, cream cheese, parm cheese and hot sauce. Blend until smooth. Put mixture in saucepan and heat on low until hot and bubbly. Dip the tortellini into garlic sauce.
