Ingredients:

1/2 lb large shrimp 
1 cup bread crumbs
1 cup coconut flakes
1/4 cup cornstarch 
1/2 cup pina colada mix
1 tbsp 4X sugar 
1/2 cup cornstarch

Procedure:

Mix bread crumbs, 1/4 cup cornstarch, and coconut in deep bowl. Set aside.Combine pina colada mix and 4X sugar. Set aside.Place 1/2 cup cornstarch in third bowl.Heat oil for frying.Coat shrimp in cornstarch.Next, dip into pina colada mixture.Then coat shrimp in bread crumb mix.Repeat those 3 steps.Place into hot oil, 2 or 3 at a time.Fry till golden brown.Remove from fryer & drain on paper towels.
