Scotch Eggs - DEN


Ingredients:

bulk sausage (Jimmy Dean, etc or seasoned loose sausage) - 1/4 lb per egg
hard boiled eggs (peeled)
2 uncooked eggs
breadcrumbs
flour

Procedure:

Dust cooked hard boiled eggs w/flour and wrap in sausage.   Place sausage in
hand and carefully enclose egg so no egg shows thru.  Dip in 2 beaten eggs
and roll in bread crumbs.  Bake at 375 for 25 mins or deep fry until brown.
Simpler version is simply coat egg with sausage and not use breadcrumbs.
