Peach Flan - MAB
This original recipe had called for a 9 oz. cake mix. Since they don't sell that size any more, I made the recipe with a regular cake mix and used 1/2 of the batter for the flan and used the rest of the batter for cupcakes or a one layer cake.
Ingredients:
1 yellow or white cake mix
peach syrup
1- 3 oz pkg vanilla instant pudding
1 cup milk
1 cup light cream
1 large can sliced peaches
Pam spray
Flan pan
Procedure:
Drain peaches. Save syrup.Prepare cake mix per directions, substituting peach syrup for water.Spray flan pan with Pam. Pour 1/2 batter into pan. Bake @ 350 degrees about 25 minutes.Cool 10 minutes before removing from pan.Using milk and light cream, prepare pudding per directions.Fold 1/3 cup coarsely chopped peaches into pudding mixture.Pour into cooled flan shell. Arrange peach slices on top of pudding. Chill several hours.
