Ingredients:

Pumpkin bread

1 cup sugar

3 eggs

2/3 cup canned pumpkin

1 tsp cinnamon

1 tsp baking soda

¾ cup flour

 

Filling

1 cream cheese

1 cup powdered sugar

4 tsp melted butter

½ tsp vanilla

Procedure:

Beat sugar & eggs, add remaining dry ingredients.  Bake at 350- 15 minutes in greased 11 x 15 pan.  Mixture will be fairly thin.  Flip cake out of pan onto towel or pillow case which you can use to help roll up.
 

After removing cake from pan, spread with cream cheese mixture and very carefully roll using dish towel or pillow case.  Don’t worry about cracks.  When you cut the cake no one will notice them anyway.
