Grammy's String Bean Soup - CEL
FRESH yellow string beans
Cook at least 1/2 of a big pot of string beans for about 10 mins. Then drain & rinse real good.
Put back in pot with water to cover & add 1 small finely chopped onion. Shred a carrot into pot.
When almost done add about 3-4 diced potatoes. Small dice.
In the mean time make a roux. 3-4 tbsp. flour & 3-4 tbsp. butter in frying pan. Cook for about 3 minutes & add some milk.
Add to done soup & add more milk. Add about 3 tbsp. freshly chopped parsley.
