Ingredients:

2 small zucchini, sliced thin
3/4 cup shredded carrot
1/2 cup chopped onion
6 tbsp butter
2 1/4 cups herbed stuffing cubes
1 can  condensed cream of chicken soup
1/2 cup sour cream

Procedure:

Cook zucchini in a little boiling water, until partially done. Drain. In saucepan, cook carrot & onion in 4 tbsp butter till tender. Remove from heat. Stir in 1 1/2 cups stuffing cubes, the soup, and sour cream. Gently fold this mixture into the zucchini. Turn into casserole. Melt remaining butter. Mix with rest of cubes. Spread this on top of casserole. Bake at 350 degrees for 30-40 minutes.
